In some ways, nothing has changed. The iconic black walls and red banquets are still there, as is the roaring 18th century French limestone fireplace. Adorning the walls are portraits of former Lambs, as well as a mural in which a group of well-suited men appear to stare at you from a bar. But in other ways, the place has been updated: Longtime operator David Rabin brought in Michael White, the three-star Michelin chef behind Marea and Ai Fiori, to modernize the menu which is now dotted with a delicious array of seafood. (The Dover Sole is a must, as is the trofie with lobster.) Then, he partnered with Kyle Hotchkiss Carone’s Grand Tour Hospitality (known for their buzzy spots Saint Theo’s and American Bar) to help infuse a more au courant feel. It’s no longer jazz that pipes through the room, but rather a ’90s and aughts-nostalgic playlist filled with the sounds of Grace Jones, U2, and Sinead O’Connor. “What I always loved about The Lambs Club is that it was this modern, clubby place that also had so much history,” Kyle Hotchkiss Carone tells Vogue. “What we are doing with this latest iteration is examining what that looks like in a 2022 environment, as we are in a bit of a different world.”
Except, well, if you moved here after March 2020. That’s when The Lambs Club, like every other New York City restaurant, closed. But while other eateries slowly came back to life as restrictions eased, the Lambs Club—housed in a tight, clubby space, with no windows or exterior access—was far more difficult to revive. And even if they did manage it, the question was whether anyone would return to the red-and-black Thierry Despont interiors. Midtown office buildings remained vacant of workers, Broadway theaters void of shows. Tourism to New York had hit a record low. The very purpose of the Lambs Club—a power lunch, or pre-show dinner—was in jeopardy. Yet this week, more than two years later, the Lambs Club is finally throwing open its heavy, historic doors again.
Crack the eggs and whisk them in a mixing bowl. Combine the grated parmesan cheese and breadcrumbs in another mixing bowl. Dip the chicken breast in the eggs and then in the breadcrumb’s mixture and place one chicken at the time in between 2 plastic film and pound it out until nice and evenly thin. Remove the plastic film then in a nonstick pan on medium heat cook the chicken paillard 2 minutes on each side until golden brown. Place tomatoes on the chicken paillard. In a mixing bowl add cucumbers, onions, lettuce and toss with the lemon vinaigrette. Place it on the chicken paillard and top it of with the shavings of parmesan. It is perhaps a testament to The Lambs Club that, despite the restaurant’s chaotic placement right off of Times Square, its awning still catches your eye the moment you turn the corner on 44th Street. Part of it, sure, is its bright red coloring. But it’s also the recognition that comes with the name: the Stanford White building was once home to the famous theatrical social club of, in the alleged words of George S. Kaufman, “actors trying to be gentlemen,” like Cecile B. DeMille, Fred Astaire, Eugene O’Neill, and Irving Berlin. Even when the club moved on to a new location in Rockefeller Center in the 1950s, a restaurant of the same name remained and took on an illustrious reputation of its own as a lunch spot for the various publishing houses nearby. Simply put: if you’ve lived in Manhattan anytime in the past century, you’ve heard of The Lambs Club—and maybe even been there too.
